Don's Bean Dip
2 Cans 15 oz cans black beans
1 Can 16 oz can whole corn kernels
1/2 to 1 cup Purple onion chopped fine depending on how much you like onion
6 tbs lime juice
6 tbs vegetable oil
1 8 oz can Tomatoes, chopped
1/2 10 oz can Rotel tomatoes, pureed
1/2 - 3/4 cup medium Piquante sauce
Drain beans, corn and tomatoes
Combine ingredients in large bowl
Season with salt and pepper if desired
Cover and refrigerate 24 hours, stirring occasionally
Serve with tortilla chips or as a side dish
If someone offers you a breath mint after you have a bunch of this dip, it is best to accept it!
